
Pumpkin. And pumpkin pie spice! Elizabeth Barrett Browning said it best when she said… How do I love thee? Let me count the ways…

3/4 cup canned pumpkin puree
1/2 cup brown sugar
2 T melted butter
1 T vanilla
1 T pumpkin pie spice
1 tsp sea salt
3 cups old fashioned oats
1 cup chopped pecans
1/2 cup dried cranberries
1/2 cup currants
Preheat oven to 325. Line a large rimmed baking sheet with parchment paper. In large bowl, whisk together pumpkin, sugar, butter, vanilla, pumpkin pie spice and salt. Add oats and pecans- toss to coat. Spread evenly on prepared baking sheet and bake 45 minutes, stirring halfway through. Remove from oven and stir in currants and cranberries. Cool completely and store in airtight container.
